Vietnam - Piquant Cauliflower


Piquant Cauliflower



(Serves 4)

Ingredients

-       Cooking spray
-       2 shallots, thinly sliced
-       3 cloves garlic, minced
-       1-2 Tablespoons soy sauce
-       3 tomatoes, peeled, seeded, and cubed
-       1 large cauliflower, cut into flowerets
-       1 small onion, thinly sliced
-       2/3 cup vegetable stock
-       1/2 teaspoon lemon juice
-       2 scallions, thinly sliced (white and green parts)
-       Cilantro for garnish

Directions

-       Spray a skillet or wok with cooking spray and sauté shallots and garlic for 1 minute.
-       Add the soy sauce and tomatoes, and sauté for another 3 minutes.
-       Add the cauliflower, onion, stock, lemon juice, and scallions. Reduce the heat and cook until the vegetables are tender-crisp, about 10 minutes.
-       Place cauliflower mixture on a platter. Garnish with cilantro.
