shallots, thinly sliced

cloves garlic, minced

Tablespoons soy sauce

tomatoes, peeled, seeded, and cubed

large cauliflower, cut into flowerets

small onion, thinly sliced

cup vegetable stock

teaspoon lemon juice

scallions, thinly sliced (white and green parts)

Cilantro
for garnish
Directions

Spray
a skillet or wok with cooking spray and sauté shallots and garlic for 1 minute.

Add
the soy sauce and tomatoes, and sauté for another 3 minutes.

Add
the cauliflower, onion, stock, lemon juice, and scallions. Reduce the heat and
cook until the vegetables are tender-crisp, about 10 minutes.

Place
cauliflower mixture on a platter. Garnish with cilantro.
